King Island Cheddar Yellow Rock (Red Leicester)
Made to the style of the Red Leicester it is a delicately flavoured cheese that is matured for a minimum 6 months and becomes sweeter with age. There is a slight suggestion of green grass bitterness, behind more distinctive butterscotch and nutty flavours. The red/orange appearance is derived from the South American annatto bean. The bean was traditionally added to give the cheese a distinctive appearance. Adds colour to the cheeseboard.
