Blue Cheese, Pumpkin & Leek Frittata
Ingredients:
300g Japanese Pumpkin, sliced
1 leek, roughly chopped
1 zucchini, sliced lengthways
100g King Island Roaring
Forties Blue
7 eggs
2 tblsp dill
Salt & Pepper
Method:
Pre heat oven to 180C, roast the pumpkin until soft.
Saute the leek in a fry pan over medium heat until softened. Transfer to a bowl.
Cook the zucchini for a minute on each side.
Layer the leek, pumpkin, zucchini, King Island Roaring Forties Blue and dill in an oven proof fry pan.
Beat eggs lightly in a bowl, season with salt and pepper.
Pour eggs over the ingredients, cook gently for approx. 20 mins. Frittata can be finished off in the oven.
Serve with a green salad.
