King Island Dairy’s Black Label Double Brie, was declared Grand Champion Cheese at the Australian Grand Dairy Awards 2006.
This handcrafted cheese is made in the traditional French Brie de Meaux style with pasteurised milk sourced from King Island. When fully ripe, the delicate white and orange mottled surface creates a wild earthy aroma and encases a rich oozing centre with distinct mushroom flavours.

King Island Dairy Black Label Double Brie & Smoked Salmon Gourmet Melts
* 4 slices thick white bread
* 1 avocado mashed
* 400g Springs smoked salmon fillets
* 150g King Island Dairy Black Label Double Brie, thinly sliced
* Olive oil
* Cracked pepper to season
Method:
Preheat grill on medium heat. Toast bread.
While still hot, brush or spray olive oil over 1 side of each piece. Place on board oil side up.
Spread over mashed avocado. Top with Springs smoked salmon & King Island Black Label Double Brie.
Place onto grill tray. Cook for 4 minutes or until brie begins to melt.
Season with cracked pepper & serve immediately.
